Juicing ideas - Hide the brocolli, Green and Clean, and Greentastic

Hide the Broccoli!

3 apples
1 beetroot
large piece of broccoli stalk
1" root ginger

And yes it does hide the taste of the broccoli - it has a general tangy vegetabley taste.


Green and clean

A fresh but sweet tasting green juice:
1 apple
1 pear
3 kiwis
1/2 pineapple
1  large handful of spinach

makes 2-3 good sized glasses




Greentastic

3 handfuls of spinach
1 carrot
3 apples
2 Satsumas
1/2" root ginger
1 peach

Quick lunch idea - chinese style buckwheat noodles and salad

Fast food needn't be junk food. There are some very quick and easy to make meals, but often it's thinking of them that's the trouble. So my plan is to keep a section on quick, easy, healthy, lunches.

Chinese style noodles 

1 'cake' of ramen buckwheat noodles
1 tablespoon of soy sauce
1 talespoon of oyster sauce
1 tsp chinese 5 spice

Prepare the noodles as per the pack instructions, drain, stir in the other ingredients. I buy King Soba buckwheat ramen noodles and the pack says to simmer them but I find the texture much nicer if I simply soak them in boiled water for 5 minutes then drain.
Serve with a salad of your choice. Today, mine is mixed green leaves, sliced radishes, and carrots.

Juicing Ideas - Ogre juice

Ogre Juice

My hubby named this one - due to it's rather lurid colour. The strong green and red do fight somewhat - but I take that as a measure of the amazing antioxidant levels and chlorophyll - fabulous for the immune system, healthy blood, and detoxing. I like to include the stalks from beetroot when juicing - packed with supernutrients and often wasted these are great for juicing. This is a juice that does taste of vegetables - I do love it - but if you are one of the people who don't like the idea of drinking vegetables there are lots of juices that contain veg but don't taste as though they do. Ingredients:
Large handful of spinach
Bundle of beetroot stalks
2 beetroot - peeled
1 apple
Fist sized piece of red cabbage

Meal Plan Monday

In an effort to get more organised, and save money by buying only what we need, I have decided to have a go at weekly meal planning, so here is this week's:

Monday:  Ham and egg salad
Raspberry pavlova - we have lots of raspberries ready in the garden right now.

Tuesday: Coq au Vin, roast potatoes or roast Arbi (see my post HERE), vegetables
Raspberry ripple ice-cream (made using a simple custard base to use up the egg yolks left from last night's pavlova)

Wednesday: Mushroom risotto - I put my portion out before adding the cheese as I am dairy free (see recipe HERE)
Raspberries and cream (coconut cream for the dairy-free).

Thursday: Nut roast (to use up the rest of the mushrooms from Wednesday) (recipe HERE), with a large green salad or fresh veg if the weather is cool.

Fridsy: Vegetable and Quorn curry with rice (recipe HERE)

Saturday: Gammon done in coke in the slow cooker, served with fresh veg or salad depending on the weather.

Sunday: Roast beef, Yorkshire puds (see my gluten and dairy free recipe HERE), with fresh veg.

I deliberately don't plan my veg in advance as I like to buy what is good value and looks nice on the day. Our local Tesco often have items reduced to about 5p at tea time and I regularly pick up fresh veg for tea and maybe some fruit this way. If there isn't any I can fall back on what is in the freezer.
There will probably be fresh fruit, raspberry ripple ice-cream, or raspberries and cream for dessert on the other evenings if people want some.

Recipe - Slow Cooker HillBilly Beans

Ingredients:

Small gammon joint (about 500g)
A little water

1 tin baked beans
1 tin chick peas
1 tin black eyed peas
6 tbsp ketchup
3 tbsp molasses
1 tsp mustard
1/2 tsp salt
1/2 tsp pepper
2 tsp Worcestershire sauce

Place the gammon joint in the slow cooker with a little water - to a depth of about 1 inch - and cook on medium for 4 hrs.

After 4 hrs lift the gammon out and cut into chunks. Pour out the water and wipe out any fat or scum with kitchen paper.

Return the gammon pieces to the pot and add the remaining ingredients. Cook for a further 2 hours on low.

Serve with potato wedges or crusty bread.

Serves 4.

About Arbi



I have mentioned before that my daughter and I are unable to eat potatoes. We have been eating eddoes as a substitute quite often. You can read about eddoes here: Eddoes - an alternative to potatoes.  However I cannot always get hold of them and I have found a few times that the stock in the shops, that do have them, is too old to be worth eating - you can tell because the eddoes feel too light (they should feel about as heavy as a comparable potato) and experience has taught me that when they are too light they are dry, powdery and unpleasant.

So I was very pleased when I stumbled upon another alternative in our local ethnic supermarket. They are a relative of eddoes, called Arbi, and they look like small, slightly hairy, new potaotes:



Unlike eddoes, which have to be par-boiled before you can peel off the tough outer skin, you can treat these pretty much like potatoes. They are particularly nice roasted, although they are smaller than I  would normally make roast potatoes. These took about half an hour to cook:

Recipe - Lemon shortcakes (gluten and dairy free)

Ingredients:

170 g (6 oz) dairy free margarine (I use Vitalite)
70 g (21/2 oz) raw cane sugar (or caster sugar)
170 g (6 oz) rice flour
zest of 2 lemons
1 tsp lemon extract
1/4 cup of coconut milk (the type you get in a litre carton - I use Koko)

Preheat oven to 160 C (140-150 fan /gas 3-4).
Cream margarine and sugar. Beat in the lemon zest and extract. Stir in the flour and beat well.
Spoon into a piping bag or gun (see my Masterchef biscuit and piping set review here:   )>
Pipe into cupcake cases. Don't fill them too high - these are not like cupcakes, think more like Viennese Whirls in paper cases. Bake for 20-25 minutes.

Makes 12 - 15

Review - Breatheasy cleaning products

I was lucky enough to win these a while ago. I actually rather like cleaning when I'm in the mood, and definitely enjoy it more if I'm using nice cloths and products.  I do generally use mostly 'green' and natural solutions. Vinegar, bicarb, and lemon juice are top of my list. However, I'm not a  total purist and will occasionally try something new that's a bit more 'commercial'.



My husband is asthmatic and the whole family suffer from various allergies and sensitivites. This is one of the reasons I switched to natural alternatives. However, I have to confess the ease of just being able to pick up a bottle and squirt is rather nice at times.

So, I've had these quite a while and have used them all a fair few times. I'm happy to report that they seem to clean well and have not caused any problems in terms of anyone's allergies. I sometimes use Ecover all purpose spray and the Breatheasy kichen spray and bathroom spray perform about as well as this. The scent is quite mild though I'm not sure I'm too keen on it. But then apart from the Ecover my usual scents come from a few drops of essential oils.  I have really got used to the natural smells and find most synthetic perfumes in any kind of product are not really to my liking. The tile and shower spray does seem to do a better job than an all purpose cleaner.

The one I really do like is the window cleaner. I have used window cleaning products in the past and not been blown away. My normal routine would be soapy water and a little white vinegar. The breatheasy spray is amazing though. A tiny squirt and I have a streak free shiny window in seconds.

So;   I'm personally not happy to ditch my green and natural methods but for anyone who is looking for an alternative to regular cleaning products that are kinder to allergy sufferers I can recommend them and when I'm feeling rushed I do like to be able to clean a window or mirror pretty much instantly.

Easy Spicy Sausage and Bean casserole

With the weather still on the chilly side, I like a nice comforting dish.  This ticks the box nicely, ifsfull of flavour, and cheap to make.

8 sausages (I use gluten free)
A little oil for frying
2 cloves of garlic, finely chopped
4 tablespoons tomato ketchup
1 tablespoon blackstrap molasses
1/2 tsp ground nutmeg
1/2 - 1 tsp Cayenne pepper (it is quite hot so try 1/2 then add more if you like heat)
1 tsp mixed herbs
Black pepper to taste
Handful fresh parsley finely chopped
1 can baked beans in tomato sauce
1 can red kidney beans, drained
1 can borlotti beans, drained
Approx, 1/2 cup water

Fry the sausages in a little oil until browned and cooked through. Drain off most of the oil and add the garlic and cook for a couple more minutes. Stir in the ketchup, molasses,  and a little of the water. Add the herbs and spices and stir well. Stir in the beans. Add enough water to make a thick sauce and adjust seasoning to your taste. Warm through thoroughly and serve with crusty bread or a baked potato.
